Kaipola aka Plantain Cake

Ingredients

  • Bananas (ripe) 3 nos
  • Eggs 4 nos
  • Sugar 4-5 tbsp
  • Cardamom powder 1 tsp
  • Vegetable oil 1/2 tbsp
  • Cashew nut 1 tbsp
  • Raisins 1 tbsp
  • NOVA Ghee 1 tsp

Directions

Peel out banana and cut into small square pieces

In a pan heat vegetable oil or ghee and fry the banana till it get golden brown colour

Drain out the excess oil and let it cool

In same pan fry cashew nuts and raisins separately, Keep it aside

In a bowl add 4 eggs , sugar and cardamom powder and wisk well

Add fried banana into this egg mixture, Mix well

Heat 1 tsp of ghee in pressure cooker at low flame

Pour egg banana mixture into it

Then add fried cashew nuts and raisins into it

Close the lid without pressure cooker weight

Cook in low flame until steam comes out through the nozzle

Insert a tooth pick at the center and ensure it comes out clean

Once it cooled take out from cooker or pan and serve
